Zucchini & an Apple Slicer?


Maybe you are saying to yourself that our last zucchini recipe was a little too involved. You just want something simple, right? I hear you. I wish I could tell you that every night we have these wonderfully complex harvest meals, but that isn't reality.

Jerry and James are now in second grade and in the same class for the first time in elementary school. Trying to get through homework, house chores, gardening, family time, dinner, and a bath each night is tough.

When we are having one of those nights where we are tired or just don't want to cook an intense meal, we use simple tools to expedite our cooking.

Enter the apple slicer.

Using an apple slicer to prepare zucchini

1. To prepare zucchini quickly, I chop off the ends and cut it into about three to four logs. Then, I use my apple slicer to cut the zucchini into eight pieces. The apple slicer also removes the seeds from the middle.


2. Next, add the zucchini to a hot pan coated with a thin layer of olive oil.


3. Add your favorite seasonings and saute until tender. You can eat the zucchini as a side right after this step. If you can muster up a little more energy, you can elevate the zucchini to the next level.


4. Add the zucchini on top of your favorite pasta!
