My kids don't like carrots with peanut butter or ranch dip; they like their carrots cooked. Cooking carrots is a great way to use some thyme.
I didn't grow carrots this year. We have had a huge problem with rabbits in our neighborhood this year, so I didn't want to add any extra temptation.
This recipe is so simple and my kids love it. I boil a small bag of baby carrots and add about a 1/4-1/3 cup of brown sugar and then two teaspoons of fresh thyme picked right before cooking.
It is easy and simple and this side has a earthy taste with a touch of sweetness added.
Enjoy!
