I was able to harvest a 1/2 cup of chocolate mint leaves from two plants that I am growing in our sunroom. I decided to keep it potted since mint is notorious for spreading in the ground and taking over areas. I have been spending lots of time researching all the wonderful ways mint can be used. There are many fresh mint uses. One is just eating the mint leaf. I ate the first leaf I picked. It freshens your breath better than gum. I decided to use the rest of the chocolate mint leaves to make mint extract. I made one using alcohol and one using apple cider vinegar and water. It takes about four weeks to be ready for use. I'll post my mint extract method soon.
